How do I get this customization?

You need to have the latest version of the app on iOS or Android. Then simply pull up the bottom panel, where you'll find the forecast display toggles.

A pollen forecast would be nice for the health section.

in your planning of future updates please consider a astrophotography forecast. ( clear skys dewpoint darkness

You can now also display the dew point and cloud cover in the new customizable table forecast. We don't currently show sky darkness directly, but it can be inferred from the available data about the Sun and the Moon. However, it's a good idea for a new parameter. Thank you for the suggestion.
